Baked Pineapple Salmon

Oven-baked salmon is a weeknight staple for me. It’s quick, easy, and completely versatile based on how you want to season and serve it. When I’m looking to add some summer flavors to this classic dinner, I turn to this pineapple baked salmon recipe. Layering on pineapple circles under the salmon adds a sweet citrus flavor to the salmon that is just unbeatable. Giving the salmon a quick broil at the end of cooking gives the marinade a chance to caramelize, creating an incredible flavor and texture. Just make sure to keep a close eye on it, so you don’t overcook the salmon! Two to three minutes is all you need under a hot broiler.

I love serving this salmon with a side of rice, but you’ve got options here. Checkout any of our favorite side dishes for salmon, or serve this alongside miso roasted carrots, fried rice, or chili oil smashed potatoes.
